Blaze Fast Fire’d Pizza Now Open in Berwyn Gateway Plaza Phase II
Blaze Pizza, located at 7122 W. Cermak Rd, celebrated a ribbon cutting in conjunction with the City of Berwyn and the Berwyn Development Corporation (BDC) on August 10. Blaze Pizza serves fast-fire’d custom built artisanal pizzas.
Blaze Pizza, the new pizza chain backed by basketball superstar Lebron James, is the third tenant to open in Berwyn Gateway Plaza Phase II. The second phase of Berwyn Gateway Plaza, between Maple and Wisconsin Avenues, started off strong this year with the opening of Starbucks. An existing Fifth Third bank was moved to a new building on the east end of the block. More units are currently under construction with full development anticipated to be completed by the beginning of 2017.
Since its first restaurant debuted in 2012, Blaze has quickly become one of the nation’s hottest restaurant concepts, with fans lining up each day for the custom-built pizzas, freshly made salads, blood orange lemonade and s’more pies. Inspired by the assembly line you see at Chipotle, the pizzas are made fresh in front of customers’ eyes. The concept is simple: You pick your crust, sauce, cheese and toppings, and your pie is popped into a blazing-hot oven for a mere 180 seconds. Employees make the dough by hand and allow it to rise for 24 hours before serving. Then, customers build their own pizzas, picking from seven cheeses, eight proteins, 20 vegetables and three sauces. The pies are placed in an extremely hot stone-hearth oven, which takes just three minutes to cook the pie. A standard pie costs between $5 – $8, depending on the toppings, which include unlimited toppings at no extra charge.
Blaze Pizza Franchise Partner Adam Cummis commented, “This is the 151st store location for Blaze Pizza. The dough is made fresh in-house daily, the pizza cooks in about 180 seconds, there are 40 different ingredients to choose from and it’s all for about $8. We do offer a robust fundraising program and our student certificates have really been a boon to the community. Keeping kids in school and keeping them motivated is something Blaze wants to be known for.”
Blaze’s obsessive attention to detail extends well beyond the food, with a carefully considered, modern approach to restaurant design. The restaurant features an interactive open-kitchen format that allows guests to customize one of the menu’s signature pizzas or create their own, choosing from a wide selection of fresh, artisanal ingredients – all for about $8. The new Berwyn restaurant also features a selection of wine and local craft brews.

To celebrate the grand opening of its Berwyn location, the restaurant offered FREE build-your-own artisanal pizzas on Tuesday, August 9 to anyone who followed Blaze Pizza on Instagram, Twitter, or Facebook. The store gave away over 1,200 pies.
Blaze has been one of the fastest growing franchises in recent years. Sales tripled in 2015 compared to its previous year. The number of stores has grown from 50 units in 2014 to 105 at the end of 2015. They plan to have 210 locations online by March of 2017.
